Syrian Chicken
Ingredients
- 2 tsp salt
- 2 tsp ground cumin
- 2 tsp ground cinnamon
- 1 tsp black pepper
- 1.5kg chicken
- 100ml olive oil
- 2 brown onions
- 100g ginger
- 5 garlic cloves
- 2 red chili
- 2 tomato
- 1/2 tsp cumin seeds
- 5 sprigs of thyme
- 1 lemon juiced and zested
- 2 tbs honey
- 100g currants
- 2 stock cubes
- Heat oil, salt, cumin, cinnamon, pepper and turmeric in pan
- Add and brown chicken
- Remove chicken and set aside
- Add onion, ginger, garlic and chili, cook for 3 minutes
- Add tomato, cumin and thyme, cook for 2 minutes.
- Return chicken, add lemon, zest, honey, currants and stock
- Add enough water too cover chicken
- Simmer for 10 minutes lid on, uncover and simmer for 15
- Serve with Couscous
